For five decades, Claire\u2019s Corner Copia has been more than a cafe.\u00a0 It\u2019s been New Haven\u2019s cozy kitchen table, serving fresh flavors, comfort food, and a whole lot of love. This fall, founder Claire Criscuolo is celebrating her golden anniversary the way she knows best: with a brand-new cookbook full of beloved recipes and stories from her landmark corner caf\u00e9.<\/p>\n

From Nurse to Neighborhood Icon<\/b><\/p>\n

Claire didn\u2019t set out to run a restaurant. A registered nurse turned restaurateur, she followed her heart (and her taste buds) into a new path. \u201cLove has always guided me,\u201d she says. \u201cI wanted to create something that built community around real, fresh foods made with care.\u201d<\/p>\n

Fueled by family recipes, her brother\u2019s travel tales, and a deep respect for ingredients, she opened Claire\u2019s in 1975 on a sunlit corner across from Yale\u2019s Old Campus. \u201cOnce I saw the steeple from Trinity Church and how the light hit that corner, I was in love.\u201d<\/p>\n

The Coffee Cake That Became a Legend<\/b><\/b><\/p>\n

Over the years, trends have come and gone, but Claire\u2019s has stayed true to its roots: vegetarian, kosher, organic, and community-focused before any of that was trendy. And then there\u2019s the cake. If you know Claire\u2019s, you\u2019ve probably met the Lithuanian Coffee Cake, a cinnamon-streaked, crumb-topped masterpiece with a sweet twist of backstory. (\u201cThe secret ingredient?\u201d Claire says with a grin. \u201cJust yumminess.\u201d)<\/p>\n

A New Chapter, a New Cookbook<\/b><\/b><\/p>\n

To mark 50 years, Claire has released her fifth cookbook: 50 Vegetarian Recipes from 50 Years at Claire\u2019s Corner Copia<\/span><\/a>, blending favorites from the menu with heartfelt memories. \u201cThis one felt different,\u201d she says. \u201cI knew the restaurant deserved a cookbook that celebrated this milestone with some \u2018Oldies but Goodies\u2019 and new creations I love.\u201d<\/p>\n

A Mission That Goes Beyond the Menu<\/b><\/b><\/p>\n

Claire\u2019s has always served more than food. \u201cThe reason we\u2019re given more than we need is so we can share with those who have less,\u201d she says. That philosophy is written right on the caf\u00e9\u2019s walls and in everything she\u2019s built.<\/p>\n

So what\u2019s next? \u201cI\u2019m going to Italy soon!\u201d Claire laughs. \u201cAnd when I do retire – not yet – Claire\u2019s will be in the best hands, thanks to our incredible team.\u201d<\/p>\n

After 50 years, her guiding principle remains the same:<\/p>\n

\u201cEvery day is an opportunity to be better, kinder\u2014and if we do that, we\u2019ll be happy.\u201d<\/i><\/p>\n
